Smokey Grilled Espelette Acorn Squash

  • 2 medium sized acorn squash
  • Pet Pet Smoky Espelette BBQ rub
  • Brown Sugar
  • Extra Virgin Olive Oil


Preheat your grill to 325-350 degrees
Cut the acorn squash in half and scoop out the seeds and guts with a spoon
Brush the flesh side of acorn squash with evoo, a little sprinkle of brown sugar, and a hefty sprinkle of Smoky Espelette BBQ
Place it on your grill flesh side up, close the lid and let it grill for 20 minutes or until flesh is tender enough to easily pierce with a fork 
Pull off the grill, lightly sprinkle with a little more smoky Espelette bbq, cut into bite sized pieces and enjoy!
